La Cocina, Boning Knife

"La Cocina" and "Boning" Fine Handmade Custom Chef's, Utility, Working Knives

This knife pair was custom designed to a client's specs for dedicated use in the kitchen.

La Cocina means the kitchen, and that is exactly what this knife is designed for. This is an early design of mine, created for fruits, medium to small vegetables, and numerous tasks the chef would encounter. Truly, La Cocina has become one of my most popular knife designs, and I've even made versions of this knife that are used in utility and hunting chores, as well as being held for collection value. The blade of this knife is wide, with a deep hollow grind that makes for an incredibly thin geometry at the cutting edge. This particular La Cocina has a 440C high chromium satin finished stainless steel blade for working utility and no flair. The tang is fully tapered and the knife has no filework for easy cleaning. The satin finished blade has just enough drop at the grind termination and choil to keep the fingers off the cutting board. The handle shape has a slight forefinger groove for control, and the butt of the handle drops slightly so the handle does not dig into the palm. This La Cocina has polished high nickel, high chromium austenitic stainless steel bolsters which are dovetailed and bed a pair of Dymondwood handle scales. This is pressure stabilized phenolic impregnated birch laminate, and is the only waterproof wood product that can last indefinitely on a knife handle with little care.

The Boning knife is slender and elegant, with a very tight 3" contact wheel hollow grind and a flexible temper for those tight and demanding boning chores. Stiffer than a fillet knife, it has a comfortable handle and is finished and outfitted with the same fittings, bolsters, and handle materials as the La Cocina.

Like many of my individual kitchen knives, this La Cocina and Boning knife have matching sheaths for storage and carry, and they are made of 9-10 oz. leather shoulder, hand-stamped and tooled with matching patterns, dyed a dark tan, hand-stitched, lacquered and sealed.
